Ingredients

  • 1 cup Chicken broth
  • 2 tbsp Red wine vinegar
  • 2 tbsp Orange marmalade
  • 1 tsp Dijon mustard
  • 1 tsp Cornstarch
  • 1 lb Chicken tenders
  • 1/2 tsp Kosher salt
  • 1/4 tsp Pepper
  • 6 tsp Extra-virgin olive oil
  • 2 Large shallots, minced
  • 1 tsp Grated orange zest

Preparation

Step 1

-Whisk broth, vinegar, marmalade, mustard and cornstarch into a large bowl.
Sprinkle chicken with salt and pepper. Heat 4tsp of oil in large skillet, over med-high heat. Add the chicken and cook until golden brown, about 2mins per side. Transfer to plate and cover with foil to keep warm.
-Add the remaining oil and shallots to the pan and cook, stirring often, until beginning to brown approx. 30 seconds. Whisk the broth mixture and add it to the pan. bring to a simmer, scraping up any brown bits, reduce heat to maintain a simmer, cook until sauce is slight reduced and thickened about 2 mins.
Add chicken, return to simmer turning once until chicken is heated through about 1 min. when chicken is cooked through stir orange zest.
