Mustard Chicken and Noodles

Ingredients

  • 6 cups uncooked egg noodles about 8 oz.
  • 1 tsp. each of vegetable oil and butter
  • 4 chicken breasts, skinned and boned
  • 1/4 c. white wine or undiluted chicken broth(optional)
  • 1 tbsp. dijon mustard
  • 1 cup (250ml.) whipping cream
  • 1/2 tsp. dried tarragon
  • salt and pepper

Step 1

Bring a large pot of salted water to a full rolling boil. Add egg noodles and cook according to package directions. Meanwhile, place vegetable oil and butter in a frying pan set over medium heat.When hot, add chicken breasts, making sure not to crowd them. Saute chicken for 6 minutes, then turn, reduce heat to mediumlow and cook for another 5 minutes, until springy to the touch.

Remove pan from heat, transfer chicken to a plate and cover to keep warm. Add wine or chicken broth to pan, if using. Return pan to high heat and scrape bottom gently to remove any chicken bits. Reduce wine to 2 tbsps. Then add mustard, cream, tarragon, salt and pepper. Whisk mixture until blended. Boil vigorously, uncoverd, stirring occasionally, until sauce has thickened just enough to coat chicken, about 2 minutes.

To serve, arrange drained noodles on individual plates. Place a chicken breast on each serving of noodles and spoon sauce over top.
