Ingredients

  • 2 Tbl. butter
  • 3-1/2 cups corn
  • 1/2 tsp. salt
  • 1/8 tsp pepper
  • 1 cup chopped onions
  • 1/2 cup chopped red peppers
  • 1/4 cup green onions
  • 1 jalepeno
  • 2 tsp. garlic
  • 1/2-1 cup mayo
  • 4 oz. monteray jack cheese
  • 4 oz. sharp cheddar cheese
  • 1/4 t. cayenne pepper

Step 1

Melt 1 Tbl. butter and add corn, salt and pepper. Cook until kernels turn golden brown. Transfer to bowl.

Melt remaining butter and add the onions and peppers until onions are wilted.

Add green onions, jalepeno and garlic and cook until vegetables are soft.

Transfer to the bowl with the corn.

Add mayo, 1/2 of both cheeses and cayenne and mix well.

Transfer to baking dish and put remaining cheese on top.

Bake until cheese is melted.
