Ingredients
- 2 cups skim milk
- 2 large eggs
- 3 egg whites
- 2 Tbsp maple syrup
- 2 tsp pure vanilla extract
- 1/2 cup white bean puree (recipe# 9)
- 1 tsp cinnamon
- 2 Tbsp butter, melted
- 1/4 cup oat bran
- 6 slices whole grain bread (cinnamon raisen works well), cut in half diagonally
- optional garnish: whipped cream and maple syrup or cinnamon sugar
Preparation
Step 1
Preheat oven to 350 degrees and grease or spray a 2 qt glass baking dish.
In the prepared baking dish, whisk together all ingredients except the bread. Add the bread and toss to combine. Let sit for a few minutes (or cover with foil and refrigerate over night) until the bread is soft and has absorbed most of the liquid.
Bake uncovered for 4 minutes, until golden brown.
Serve warm drizzled with maple syrup, and garnish with a squirt of whipped cream or a dusting of cinnamon sugar.
