Ingredients

  • 1 1/4 C butter, softened and divided
  • 1 1/2 C sugar, divided
  • 3 C flour
  • 1/2 tsp salt
  • 4 eggs, slightly beaten
  • 1 1/2 C light corn syrup
  • 2 tsp vanilla
  • 1 2/3 C coarsely chopped pecans

Step 1

1. In large bowl, beat 1 C butter and 1/2 C sugar until creamy. Blend in 3 C flour and 1/2 tsp salt until mix resembles coarse crumbs. Press dough firmly onto bottom of lightly greased 15 1/2x10 1/2 pan or whatever size you choose. Bake at 350 for 25 minutes.

2. Melt remaining butter (1/4 C) and set aside. In large bowl, beat 4 eggs, corn syrup (1 1/2 C) remaining sugar (1 C), melted butter and vanilla (2 tsp) until well blended. Stir in pecans (2 1/2 C). Pour mixture evenly over crust. Bake at 350 for 25 minutes.
