This amount of pork fits nicely in most grill baskets. But you could also thread the pieces on skewers to cook them. If you opt for bamboo skewers, soak them in water for 30 mins to prevent them from burning. Turn the skewers once while cooking.

Ingredients

  • 1 pork tenderloin (1lb - 500 g)
  • 1 tbsp (15ml) Chili powder
  • 1 tsp (5ml) Ground cumin
  • 1 tsp (5ml) Packed brown sugar
  • 1/4 tsp (1ml) Garlic powder
  • 1/8 tsp (0.5ml) Ground red pepper (cayenne)
  • 1/2 cup (125ml) Mayonnaise or salad dressing
  • 1/2 tsp (2ml) Ground mustard
  • 1 Medium green onion finely chopped

Step 1

-Cut pork into 1 inch pieces;Put into medium bowl. Mix chili powder,Cumin, Brown sugar, Garlic powder and Red pepper. Reserve 2 tsp of spice mixture; Sprinkle remaining mixture over pork pieces: Stir to coat completely.Let stand 15 mins.
-In small bowl, mix Mayonnaise,Mustard,reserved spice mixture and onion; set aside.
-Heat gas or charcoal grill. Spray grill basket (grill "wok") with cooking spray. Spoon pork into basket.
-Place basket on grill. Cover grill:cook over medium heat for 10 to 12 mins. Shaking basket or stirring pork once or twice, until pork is no longer pink in center. Serve with toothpicks and mayonnaise mixture for dip.
