Ingredients

  • 2 cups flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 1 egg
  • 1/4 cup canola oil
  • 2 tsp vanilla
  • 1/2 cup raspberry jam

Preparation

Step 1

Line muffin cups with paper liners or grease.

In large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together buttermilk, egg, oil and vanilla; pour over dry ingredients and mix just until moistened.

Spoon about 3/4 of the batter into prepared muffin cups. With a teaspoon, make a dent in the centre of each and add a spoonful of jam. Spoon remaining batter over the top.

Sprinkle each with a bit of sugar and bake in a 375F oven until golden. (about 20 minutes). Remove from pan and cool on a rack.
