Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup flour
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/4 tsp. salt
- 1 cup brown sugar
- 1/2 cup butter
- 6-8 canned pineapple slices
- Maraschino cherries
Preparation
Step 1
Beat eggs until frothy; add sugar and mix well. Add flour, baking powder, vanilla, and salt; beat well and set aside. In a 10 -inch iron skillet, melt brown sugar and butter, stirring constantly. Arrange pineapple slices in the brown sugar mixture, putting a cherry in the center of each slice and between slices. Pour cake batter carefully over pineapple. Bake at 350 for 35 minutes or until cake tests done. Cool 15-20 minutes; turn out onto cake plate. Cut into wedges and top with whipped cream.
