  • 1 & 3/4 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 2 &1/2 cups flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 2 cups grated zucchini
  • 1/4 cup chocolate chips

Directions
1.Blend sugar, eggs, vanilla and buttermilk.
2.Sift dry ingredients and add to mixture. Mix in zucchini and choc chips.
3.If using electric skillet, preheat to 305 F and cut a circle of parchment paper to fit the round bottom of the pan. Spoon mixture on top of parchment, cover and “bake” for 45 minutes.
4.If cutting the recipe by half, use your 9” skillet or 2 quart saucepan with parchment paper again on a setting of medium. Will take approx 15-20 minutes. Check in the center with a toothpick.
