Beef Stew in Red Wine Sauce

Ingredients

  • 2 #s lean stew beef
  • 1 tbs butter
  • 2 tbs EVOO
  • 1/2 cup finely chopped onions
  • 1 tbs+ finely chopped garlic
  • 1 tbs flour
  • 1/2 bottle red 2 Buck Chuck
  • 2 bay leaves
  • 1 + tbs thyme
  • 10 pearl onions
  • 1 pkg mushrooms
  • 20 baby carotts
  • 1 baking potato
  • 3 oz piece pancetta or equ. bacon
  • 1/4 cup Water
  • 1 + dash of sugar
  • salt and peper to taste

Preparation

Step 1

1. Preheat oven to 350
2. Melt butter in EVOO
3. Arrange meat in single layer season with salt and
pepper. Brown
4. Add onion,garlic cook aprox 5 minutes stirring PRN add flour, wine, bay leaves and thyme. Bring to boil, cover and place in ocen for approx 1 hour.

In a seperate sauce pan
1. Add onions, potatoes, carrots mushrooms, bacon, 1/2 cup water and 1 tbs EVOO. Dash sugar, salt,pepper.
2. Bring to boil. Cover simmer 15 min. uncover,cook over high heat.
3. Add to meat with cooking water if necessary
