    #s lean stew beef

  • 1

    tbs butter

  • 2

    tbs EVOO

  • 1/2

    cup finely chopped onions

  • 1

    tbs+ finely chopped garlic

  • 1

    tbs flour

  • 1/2

    bottle red 2 Buck Chuck

  • 2

    bay leaves

  • 1

    + tbs thyme

  • 10

    pearl onions

  • 1

    pkg mushrooms

  • 20

    baby carotts

    baking potato

  • 3

    oz piece pancetta or equ. bacon

  • 1/4

    cup Water

  • 1

    + dash of sugar

  • salt and peper to taste

Directions

1. Preheat oven to 350 2. Melt butter in EVOO 3. Arrange meat in single layer season with salt and pepper. Brown 4. Add onion,garlic cook aprox 5 minutes stirring PRN add flour, wine, bay leaves and thyme. Bring to boil, cover and place in ocen for approx 1 hour. In a seperate sauce pan 1. Add onions, potatoes, carrots mushrooms, bacon, 1/2 cup water and 1 tbs EVOO. Dash sugar, salt,pepper. 2. Bring to boil. Cover simmer 15 min. uncover,cook over high heat. 3. Add to meat with cooking water if necessary
