Baked Butternut Squash with Italian Sausage

Ingredients
- 1 . 1 butternut squash, halved and seeded.
- 2 . 2 tbs EVOO
- 3 . Salt and pepper to taste.
- 4 . 2 links sweet Italian sausage
- 5 . 1/3 medium onion, finely chopped.
- 6 . 1 green bell pepper, finely chopped
- 7 . 1+ tbs garlic, minced
- 8 . 1+ cups bread crumbs
- 9 . 1. tsp+ parsley (freah), chopped.
- 10 . 1 tsp+ sage dried
- 11 . 1 egg
- 12 . Parmesan cheese, grated
- 13 . Chicken stock

Preparation
Step 1
1. Heat oven to 350 degrees
2. Lightly coat swuash wsith EVOO, salt and pepper
3. Place on bake sheet cut side down, cover with foil
bake until tender.
4. Brown sausage over medium heat,remove and drain
5. Heat EVOO, add onion & bell pepper, saute until
soft, add garlic, stir, revove from heat.
6. In a large bowl toss sausage, bread crumbs,parsley,
sage, cheese, egg. Mix well, add chicken stock to
bind.
7. Place stuffing in squash halves, bake until heated
through. Add salt and pepper.
