  • 14 pieces (8oz) manicotti, uncooked
  • 4 cups (2lb) Ricotta cheese
  • 2 cups (8oz) Mozza cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs
  • 1/4 cup Fresh parsley, chopped
  • 1/2 tsp Pepper
  • 1/2 tsp Salt
  • 1/4 tsp Ground nutmeg
  • 2 cups (16oz) Spaghetti sauce

Preparation

Step 1

- Cook pasta, drain. Cool in single layer on foil. Preheat oven to 350F Grease 13x9x2-inch glass baking dish. In a large bowl, stir together ricotta, 1 1/2cup of mozza, 1/4cup parmesan, eggs, parsley, pepper and salt. Spoon into cooled pasta tubes. Arrange filled pasta in a single layer in prepared dish. Pour spaghetti sauce over pasta, sprinkle with remaining cheeses.
-Bake 35 mins or until hot and bubbly.
