Ingredients
- 4 burrito size wraps
- 1 lb salmon
- 1/2 tbsp cajun seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 3 cups of shredded cabbage
- 2 cups of shredded cheddar cheese
- 1 cup of salsa
- Olive oil spray
Preparation
Step 1
Cut up the salmon and marinate with the cajun seasoning and salt and pepper. No need to let the salmon sit with the marinade, unless you want to. Blacken the salmon in a pan with some olive oil and set aside.
In a large mixing bowl, add the cabbage, cheese, salsa and salmon and mix well. You may want to add more salt to the mix if it's not salty enough.
Fill the tortillas with the mix and wrap and place in a pre-sprayed baking pan. Spray the burritos and bake at 450 degrees uncovered for about 20 - 30 minutes.
