Ingredients
- 1 lb ground beef
- 1 medium onion (diced)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3/4 cup uncooked medium-grain white rice
- 1 cup water
- 2 small zucchini (1 lb) (halved, cut into 1/4" slices)
- 14.5 oz can diced tomatoes (drained)
- 19 oz can Progresso Vegetable Classics tomato basil soup
- 2 cups shredded mozzarella cheese (or cheddar)
Preparation
Step 1
Heat oven to 375°
Grease 9x13 glass baking dish.
In a large skillet, cook ground beef and onion until beef is no longer pink. Drain. Sprinkle with salt and pepper.
Place rice and water in baking dish, stir to mix. Add zucchini and tomatoes to ground beef, Stir well. Add to rice. Pour soup evenly over the top. Tear a piece of foil big enough to cover the dish. Spray with cooking spray. Place over the dish, spray side down.
Bake 40 minutes. Remove foil and sprinkle cheese over top. Bake additional 10-15 minutes.
