Ingredients

    box puff pastry

  • 2

    Tbl butter

  • 1

    cup cubed hash browns

  • 1

    cup red or green peppers - diced

  • ½

    cup onion- diced

  • 1

    cup ham - diced

  • 11

    eggs

  • 2

    Tbl chives

  • 4

    oz. softened cream cheese

  • 2

    Tbl orange juice

  • 1

    egg

  • 1

    Tbl water

  • 2

    Tbl italian cheese

Directions

Thaw pastry. Melt butter and add potatoes - saute for 5 minutes. Stir in bell pepper and onion and saute for another 3 minutes. Add ham. Whisk eggs and chives together. Add them to the pan and scramble just until set. Season with salt and pepper. Take off heat and stir in cream cheese and juice until blended. Refrigerate eggs while rolling out pastry. Roll pastry to 12" x 10" then transfer to parchment paper. Trim pastry - make several cuts on each side to braid. Fill each pastry with egg mixture and braid pastry on top. Combine egg and water and brush on top. Sprinkle with cheese. Bake at 350 for 20-30 minutes or until golden brown.
