Ingredients
- 1/4 c. low fat (2%) milk
- 1/4 c. yellow corn meal
- 1/4 c. dry bread crumbs
- 2 tbsp. chopped fresh parsley
- 1/8 tsp. nutmeg
- 1/2 tsp. each salt and pepper
- 1 (3 1/2 lb.) chicken cut into 8 serving pieces, skin removed
Preparation
Step 1
Preheat oven to 400 degrees. Spray baking sheet with regular cooking spray. Pour milk into shallow bowl. Mix dry ingredients in plastic bag. Dip chicken one piece at a time in milk, then coat with corn meal mixture. Place on prepared sheet. Bake turning pieces once, until cooked through 30 to 35 minutes.
