Reuben Casserole

Ingredients

  • 250 g wide egg noodles 8 oz
  • 15 ml butter 1 tbsp
  • 4 bacon slices, diced 4
  • 1 onion, chopped 1
  • 1 can sauerkraut, drained & rinsed (14 oz / 398 ml) 1
  • 125 ml water 1/2 cup
  • salt & pepper to taste -
  • 250 g corned beef, cubed or chopped 8 oz
  • 2 medium tomatoes, chopped 2
  • 125 ml thousand island dressing 1/2 cup
  • 250 g swiss cheese, grated 8 oz

Preparation

Step 1



Cook noodles according to package directions. Drain. Add butter. Mix. Spread into greased 9 x 13 inch (23 x 33 cm) baking dish.

In skillet, saute bacon. Add onions. Cook until onions are translucent. Pour off all but 1 tablespoon (15 ml) of drippings. Add sauerkraut and water. Simmer for 30 minutes. Add salt and pepper to taste.

Layer sauerkraut mixture over noodles. Continue to layer with corned beef, tomatoes, dressing and cheese. Bake, covered, in preheated 350 F (180 C) oven for 40 minutes. Uncover and continue to bake for an additional 15 minutes.
