  • 6 tablespoons butter
  • 1 cup flour or flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old fashioned rolled oats
  • 2 large eggs
  • 2 tespoons pure vanilla extract
  • 1 cup strawberry purée
  • 1/2 cup brown sugar, packed
  • 1/4 cup strawberry jam, optional

Step 1

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Melt butter in a microwave-safe glass or ceramic bowl on high for one minute. Cover with wet paper towel to prevent spatters.

In a large bowl, whisk together flour, baking soda, salt, and oats. Set aside.

In another large bowl, whisk together eggs, vanilla, strawberry purée, brown sugar and melted butter.

Stir the dry ingredients into the wet until the dry ingredients are just moistened. Drop single tablespoonfuls onto the prepared baking sheet, leaving about an inch between cookies. Make a small indent on top of each cookie with your finger and fill with about 1/2 teaspoon of jam, if using.

Bake 25 to 28 minutes or until golden brown. Let cool on a metal rack.

Store cookies in airtight container up to 3 days. Or freeze them for up to 3 months.
