Ingredients

  • 1 . Can salmon
  • 2 . Large potato, boiled and riced
  • 3 . 1/2 onion,finely chopped
  • 4 . 1/4 cup parsley leaves, chopped
  • 5 . 1 egg
  • 6 . salt and pepper to taste
  • 7 . 1 tsp minced garlic or ginger -optional
  • 8 . Bread crumbs, as needed
  • 9 . 1/4 cup EVOO

Preparation

Step 1

1. Combine salmon, potatoes, onion,parsley, ginger
egg, salt and pepper in medium bowl. Add bread
crumbs to stiffen
2. Shape in silver $ size cakes; dredge in bread
crumbs, dry on rack, regrigerate 15-30 minutes
3. Heat skillet over medium heat for 2-3 minutes,
add film of EVOO, add croquettes cook until browned
on all sides.
