Roasted Garlic Ciabatta Rolls

Ingredients
- 2 Heads garlic
- 1 Tbsp plus 1 tsp olive oil
- 1/8 Tsp salt
- 1/8 Tsp ground black pepper
- 6 to 8 Ciabatta rolls
- 1/4 to 1/2 Tsp crushed red pepper
- Additional olive oil (optional)
Preparation
Step 1
1. Preheat oven to 425*F. To roast garlic, peel away the dry outer layers of skin from the garlic heads. Cut off the pointed top portion of the garlic heads, leaving the bulb intact but exposing the individual cloves. Place garlic heads on squares of aluminum foil in a small baking dish. Brush sides & tops of garlic with the 1 teaspoon olive oil. Form foil into a pouch around the garlic heads. Bake for 25 to 35 minutes or until cloves feel soft when pressed. When cool enough to handle, squeeze the roasted garlic from the skins into a bowl. Discard skins.
2. Mash garlic lightly with a fork, until spreadable & slightly smooth. Stir in salt & black pepper.
3. Cut rolls horizontally in half. Place bread halves on a foil-lined baking sheet. Brush both sides lightly with the 1 tbsp olive oil. Place baking sheet in oven for 6 to 7 minutes, until, bread is toasted & golden, turning once halfway through.
4. Spread garlic mixture onto cut sides of toasted bread slices. Sprinkle with crushed red pepper. Drizzle with additional olive oil, if desired.
