Ingredients
- 1 tbsp (15ml) Vegetable oil
- 2 lbs (1kg) Boneless pork shoulder roast
- 1 tsp (5ml) Ground ginger
- 1/2 tsp (2ml) Dry mustard
- 1 can (14oz) Pineapple tidbits in juice
- 3 tbsp (45ml) Brown sugar
- 1 Red bell pepper, sliced
- 3 tbsp (45ml) Water
- 2 tbsp (25ml) Cornstarch

Preparation
Step 1
-In a large skillet, heat oil over medium heat. Add pork in batches and cook, stirring for 5-7 mins or until brown on all sides.
-Return all pork to skillet and add ginger and mustard and cook stirring for 2 mins.
-Transfer to slow cooker. add pineapple, brown sugar, vinegar and soy sauce.Cover and cook on low for 6-8 hours or high for 3-4 hours.
-Stir in red pepper, cover and cook on high for 20 mins.
-Combine water and cornstarch to a small bowl, then add to the pork mix and cover and cook on high for another 10 mins until sauce thickens.
