Ingredients
- 1 c strong cold expresso coffee
- 1 package Italian ladyfingers (Savoiardi)
- 3 egg yolks
- 5 T sugar
- 8 oz mascarpone cheese
- 1 T brandy or cognac liquor
- 1 c heavy whipping cream
- 1 T unsweetened cocoa powder
Preparation
Step 1
Directions
In a mixing bowl, whisk egg yolks and sugar until frothy
Add macarpone cheese and liquor and blend until smooth
In another mixing bowl, whip cream until stiff and fold into the mascarpone mixture until well blended and smooth
Pour the cold coffee into a dish and dip the ladyfingers very quickly into the coffee and line the bottom of a 11x7x1.5 oblong dish with the ladyfingers
Spread half of the mascarpone mixture over the ladyfingers
Dip the remaining ladyfingers quickly into the coffee and arrange another layer of ladyfingers and spread the remaining mascarpone mixture
