Avocado, Tuna and Tomatoes

Ingredients
- 1 can (6-1/2 ounces/184 g) of your favourite tuna
- 2 avocados, halved, pitted, scooped, and chopped
- The zest and juice of 1 lemon
- A thinly sliced green onion
- A splash of your very best olive oil
- A handful of cherry tomatoes, halved
- A handful of chopped fresh parsley
- A pinch or two of salt and lots of freshly ground pepper

Step 1
Toss the tuna—juices and all—into a bowl and flake apart with a fork. Add everything else and toss gently until combined. Taste and adjust seasoning as needed. Serve and share!
