Avocado, Tuna and Tomatoes

Ingredients

  • 1 can (6-1/2 ounces/184 g) of your favourite tuna
  • 2 avocados, halved, pitted, scooped, and chopped
  • The zest and juice of 1 lemon
  • A thinly sliced green onion
  • A splash of your very best olive oil
  • A handful of cherry tomatoes, halved
  • A handful of chopped fresh parsley
  • A pinch or two of salt and lots of freshly ground pepper

Step 1

Toss the tuna—juices and all—into a bowl and flake apart with a fork. Add everything else and toss gently until combined. Taste and adjust seasoning as needed. Serve and share!
