Mom's Cinnamon Rolls (bread & dinner rolls, too)

Ingredients

  • 1 Cup Hot Water
  • 3 TBS yeast
  • 1 1/2 tsp salt
  • 2 1/2 TBSP butter - melted
  • 2 Cups milk
  • 3 eggs
  • 7 cups flour

Preparation

Step 1

Warm large mixing bowl with hot water. Dump water out and put in 1 cup hot water, yeast and salt. Stir gently. Let sit while melting butter in a small pan. Remove butter from heat and add milk. Add to the mixing bowl. Add eggs and 3 cups flour and beat until smooth. Add 3 more cups of flour and stir. Gradually add last cup of flour until there are no more shiny wet spots.

Dump out on floured pastry cloth and knead vigorously until smooth and elastic (about 10 to 15 mins). Place dough in buttered bowl and let raise for 30 to 45 mins. Shape into loaves or dinner rolls. Bake at 350 for 20 mins for rolls, 25 mins for bread.

For cinnamon rolls, after dough raises, dump it out and cut into thirds. Grasp both ends of a third and pull till about 2 feet long. Roll out with rolling pin to about 3/8" thickness. Spread butter over the dough, leaving about 1/2" along one side unbuttered. Sprinkle with cinnamon and brown sugar. Roll up and seal along back side. Slice rolls about 1" thick.

Butter a 9x13 pan. Coat bottom with melted butter. Sprinkle with about 1/2 cup brown sugar. Place rolls cut-side down in pan. Let raise until double the size. Bake at 350 for 20 mins. Turn rolls out onto tinfoil and scrape syrup out onto rolls. Or frost.
