Ingredients

  • 1 1/2 cups thick & chunky salsa
  • 1 cup beer or water
  • 6-0 z. can tomato paste
  • 1 pkt. taco seasoning
  • 3 # boneless beef roast, bottom round
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tblsp peanut butter
  • 1/3 cup chopped cilantro

Step 1

Put salsa, beer, tomato paste & taco seasoning in a 5-qt., or larger slow cooker. Stir to mix. Rub beef with salt & pepper; add to cooker and spoon some of the mixture over it.

Cover & cook on low 8-10 hours, until beef is very tender. Remove to a cutting board. Stir peanut butter & cilantro into sauce. Slice meat and serve with sauce.
