Ingredients
- 3 pounds carrots (about 18), peeled and sliced 1/4 in thick on the bias
- 1 1/2 cups water, plus extra hot water as needed
- 1 tablespoon sugar
- salt and pepper
- 1/4 cup honey
- 2 tablespoons butter, softened
- 1 tablespoon minced parsley
Preparation
Step 1
Combine carrots, water, sugar, and 1 tsp salt in slow cooker. Cover and cook until carrots are tender, 4 to 6 hours on low.
Drain carrots then return to slow cooker. Stir in honey, butter and parsley. Season with salt and pepper to taste and serve. This dish can be held on warm setting for 1 to 2 hours before serving; loosen with additional hot water as needed before serving.
