Middle Eastern Red Lentil Soup

Ingredients
- 1 red bell pepper, seeded,chopped
- 1 med onion chopped
- 2 T olive oil
- 1/2 head garlic
- 1 qt chicken broth plus 1 1/2 cup water
- 1/2 t coriander
- 1/4 t cardamom
- 1 t ground turmeric
- 3/4 t ground cumin
- 1/2 t ginger
- 1/4 t ground pepper
- 1/8 t cayenne pepper
- 1 1/2 cups red lentils
- 2 T chopped parsley or 1T dried
- salt to taste
- 1 T lemon juice or 1 t sumac

Preparation
Step 1
Saute onions and red pepper in olive oil until soft, about 5 min.
Add everything else except the last ingredient (lemon)
Bring to boil, then lower heat and simmer, covered for about an hour. Squash the garlic, add the lemon or sumac, kosher salt if desired.
