Ingredients
- Crust:
- 1 1/2 c flour
- 1/2 c sugar
- 1/8 t salt
- 3/4 c butter
- 2 t lemon zest
- Filling:
- 3 eggs
- 1 1/2 c sugar
- 3 T flour
- pinch of salt
- 3 T lemon zest
- 1/2 c lemon juice
- 1 1/2 c cream
- 1 to 1 1/2 c fresh blueberries
Preparation
Step 1
Crust:
Preheat oven to 350F. Mix flour, sugar, salt and lemon zest. Cut butter into small cubes. Cut butter into flour mixture. Press crust into 9x13 pan. Bake for 18 minutes.
Filling:
Beat eggs, sugar and salt. Add in juice and lemon zest. Add flour and cream. Mix in blueberries. Pour mixture onto crust. Bake for 25 minutes.
Cool to room temperature. Cut and dust with confectioner's sugar.
