Ingredients
- 2 tbsp wine vinegar
- 1 1/2 tsp chopped sweet onion
- 4 peppercorns
- fines herbes
- 1/4 c. orange juice
- 3 egg yolks
- 1 c. butter
- 1 tbsp slivered orange rind
Preparation
Step 1
Bring vinegar, onions, and peppercorn to a boil. Add 2 tbsp of OJ and strain the sauce through a sieve. Beat in egg yolks. Transfer mixture to a double broiler top set over simmering water and beat until thick and creamy. Gradually wisk in melted, then cooled butter. Beat in remaining OJ, herbs, and orange rind. Serve warm.
