Ingredients

  • 2 t evoo
  • 4 lbs bone in short ribs
  • 1 large yellow onion, chopped
  • 4 cloves garlic, thinly sliced
  • 3 c cola
  • 1 bunch kale, stemmed and chopped
  • 1 c instant polenta
  • 4 oz goat cheese crumbled
  • 2 t balsaslmic vinegar

Step 1

1) preheat oven to 325. in dutch oven, heat 1t eve over high. season ribs with salt and pepper and cook, turning til browned, 8-10 minutes. transfer to plate. discard all but 2t fat… add onion and garlic and cook over medium 4 minutes. add 1c water, stir scraping up browned bits. add cola and ribs. bring to a simmer, cover and transfer to oven til tender, about 3 hours.

2) in skillet, heat remaining evoo over medium. add kale and 1c water; cover and cook 10 minutes. uncover and cook over high til pan is dry, 2 minutes. season.

3) in saucepan, bring 3c water to boil. add polenta and cook, whisking for 2 minutes. remove from heat and stir in goat cheese; season with salt and pepper

4) transfer ribs to plate, skim fat from sauce and discard. simmer sauce over a md-high heat til reduced, 8-10 minutes. stir in vinegar, season. serve the ribs over kale and polenta topped with sauce.
