Cold Portuguese Codfish with Chickpeas and Potatoes-Aura Oliveira

Ingredients

  • Boneless codfish (I used 1 pound)
  • 6 potatoes (i use 4 large)
  • 1 can chickpeas
  • bunch of parsley, finely chopped ( I use Cilantro)
  • 1 onion, finely chopped
  • 1 large can black olives, drained and chopped
  • 2 hard boiled eggs, chopped (i suggest 3 eggs)
  • olive oil
  • red wine vinegar
  • I add paprika
  • I add 2 tablespoons chopped garlic (from jar)
  • I used freshly ground black ppper and ground salt

Preparation

Step 1

Soak boneless codfish for 1 to 2 days.

Drain and cook for 5 to 10 minutes.
Drain, cool, and shred.

Boil and chop the potatoes in cubes.

Add to mixture 1 can chick peas, parsley, onion, olives, eggs.

Generously pour olive oil and vinegar(to taste) over mixture.

Adjust seasonings with salt and pepper.
