Zucchini: creamy and curried

Ingredients
- Canola oil 15ml
- Thinly sliced onion 250ml
- Chicken broth 125ml
- Curry powder 7ml
- Medium zucchini quartered lengthwise and cut 2
- Sprinkle of salt and pepper
- Light spreadable cream cheese 30ml

Preparation
Step 1
Heat canola oil in large frying pan on medium-high ntil very hot. Add onion. Stir-fry for 2 minute until starting to golden.
Add curry powder. Stir-fry for about 1 minute.
Add chicken broth, zucchini, salt and pepper and stir-fry for about 5 minutes until zucchini is tender but crisp. Remove from heat.
Add cream cheese.
