Ingredients

  • Canola oil 15ml
  • Thinly sliced onion 250ml
  • Chicken broth 125ml
  • Curry powder 7ml
  • Medium zucchini quartered lengthwise and cut 2
  • Sprinkle of salt and pepper
  • Light spreadable cream cheese 30ml

Preparation

Step 1

Heat canola oil in large frying pan on medium-high ntil very hot. Add onion. Stir-fry for 2 minute until starting to golden.

Add curry powder. Stir-fry for about 1 minute.

Add chicken broth, zucchini, salt and pepper and stir-fry for about 5 minutes until zucchini is tender but crisp. Remove from heat.

Add cream cheese.
