Ingredients

  • Basic pie crust for double-crust pie

  • 3

    lbs. medium peaches, peeled, pitted, sliced

  • 2

    TBSP. cornstarch

  • 1

    c. sugar

  • 2

    tsp. lemon juice

  • ½

    tsp. cinnamon + some for top

  • 4

    TBSP. butter, chilled, cut into pieces

Directions

Preheat oven to 375. Lightly butter a round baking dish. In medium bowl, toss the peaches, cornstarch, sugar, lemon juice, & cinnamon. Fold in the butter. Put one piece pie crust in bottom of dish. Bake until almost done. Put 1/2 peaches on this, another layer of crust, and the last 1/2 of peaches. Cover with pie crust and bake 40 minutes. Serve warm or room temp.
