Ingredients

  • 1 Tablespoon olive oil
  • 1/3 cup long-grain or medium-grain rice
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 clove peeled and minced garlic
  • 1 cup chopped fresh Roma tomatoes
  • 2/3 cup chicken broth
  • 1/4 teaspoon thyme
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon black pepper
  • 8 ounces okra in 1/2 inch slices

Preparation

Step 1

Heat oil in large saute pan or skillet at medium high. Add rice and stir-fry golden-brown, about 3 minutes. Add pepper, onion, and garlic, stir-fry about 5 minutes, until onion starts to soften. Add tomato, chicken broth, thyme, cayenne and black pepper. Bring to a boil, cover, and simmer until rice is tender, about 5-10 minutes. Add okra and simmer, covered, until tender, about 10 minutes.
