Beer and Cheese Soup

Ingredients

  • 1/4 pound butter
  • 8 oz cheddar cheese
  • 3 c chopped celery
  • 12 fl oz beer
  • 3 c onions (chopped)
  • 1 tsp garlic salt
  • 1 carrot (grated)
  • 1 tsp white pepper
  • 8 Tbsp flour
  • 6 c chicken stock

Preparation

Step 1

Saute celery, onions, and carrots in butter until onions are translucent. Add salt and pepper. Blend in flour. Add chicken stock and cheese. Heat gently until cheese melts, stirring to prevent sticking. Add beer. Heat thoroughly. DO NOT BOIL. Serve hot.
