Ingredients

  • 3 cups regular toasted oat cereal
  • 3/4 cup grated Parmesan cheese {2oz}
  • 2/3 cup sliced natural almonds
  • 3 tablespoons extra-virgin olive oil
  • 3/4 teaspoon salt
  • 1/2 cup roasted unsalted soy nuts

Preparation

Step 1

Heat oven to 350ºF.

In a large bowl, toss together cereal, Parmesan, almonds, oil and salt until well combined. Transfer to a large rimmed baking sheet and spread out in a single layer. Bake, stirring twice, 20 minutes or until the cereal is crisp and fragrant.

Transfer to a serving bowl and add soy nuts, tossing to combine. Cool briefly and serve, or store in an airtight container at room temperature for a week.
