Ingredients

  • 3 cups strong coffee
  • 3 cups granulated white sugar
  • 3 cups brown sugar
  • 3 vanilla bean, split lengthwise
  • 6 cups warm water
  • 3 750 ml bottle of liquor (rum, brandy or vodka)
  • 1 empty 3-5 gallon container

Step 1

In a heavy pan, dissolve the white and brown sugar in the water over low heat. Gradually raise the temperature until it just begins to boil, stirring constantly.

As soon as the syrup reaches a boil, add the coffee and vanilla beans to the mixture. Cook for 1 minute then remove from the heat. Allow to cool for 15 minutes.

Once cooled, pour the syrup mixture into the 3-5 gallon container. Add the liquor and stir to combine.

Seal the container and allow to rest in a cool area for at least 6 weeks.
After 6 weeks, strain the mixture to remove the vanilla beans or any solids. Don’t though this away. Keep the beans, scrape the scrap out the centers and use in baked goods.

Once strained, add to 750 ml bottles (makes about 7). Seal bottles and enjoy with family and friends.
