Beef Stroganoff

Ingredients

  • 3 pounds beef tenderloin
  • 6 T margarine, divided
  • 3 c. beef bullion
  • 4 T. ketchup
  • 2 cloves garlic
  • 2 t. salt
  • 16 oz mushrooms, sliced
  • 2 medium onions, chopped (about 1 cup)
  • 6 T. flour
  • 2 c. sour cream
  • 6-8 c. cooked noodles

Preparation

Step 1

1. Cook and stir beef in 4 T. margarine over low heat until brown. Reserve 2/3 cup bullion, stirring rest of bullion along with ketchup, garlic and salt in skillet. Heat to boiling, reducing heat. Cover and simmer 10 minutes.

2. Stir in mushrooms and onions. Simmer, covered 5 minutes. Shake reserved bullion and flour, adding to beef mixture. Heat to boiling, stirring constantly. Boil 1 minute. Stir in sour cream. Toss noodles with 2 T. margarine. Serve beef mixture on noodles.
