Grasshopper Pie

Ingredients

  • Cookie crumb crust (see recipe)
  • 1/4 cup milk
  • 32 large marshmallows
  • 1/4 creme de menthe liqueur (any color)
  • 3 tbs creme de cacao liqueur (any color)
  • 1 1/2 cups heavy whipping cream
  • Few drops of green food coloring

Preparation

Step 1

Place a medium mixing bowl in the freezer.

In 3-quart saucepan, heat milk and marshmallows over medium-low heat, stirring constantly, until marshmallows are melted completely. Refrigerate about 20 minutes, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

Gradually stir in creme de menthe and creme de cacao and food coloring.

Remove bowl from freezer. Add whipping cream and beat on high with an electric mixer until stiff. Fold marshmallow mixture into whipped cream. pour into prepared crust. Sprinkle with crushed cookies or shaved chocolate (optional).

Refrigerate 4 hours or until set.
