Cheddar Biscuits

Cheesy, light, and crispy, these biscuits make ideal dippers for the
stew ... unless you eat them all first.

Ingredients
- 21/2 cups all-purpose flour
- 1/4 cup sugar
- 1 Tbsp. baking powder
- 1 tsp. kosher salt
- 6 Tbsp. cold unsalted butter, cubed
- 1 cup shredded sharp Cheddar
- 1 cup buttermilk
- 1 egg
- Variation: Add in 1 Tbsp of fresh chopped thyme for thyme/cheddar biscuits.
Preparation
Step 1
Preheat oven to 450°. Line a baking sheet with parchment paper or lightly coat it with nonstick spray.
Whisk together flour, sugar, baking powder, and salt in a bowl. Cut in
butter with a pastry blender or two knives until pea-sized, then add
the cheese.
Whisk together buttermilk and egg, then stir into flour mixture just until incorporated. Portion batter onto the prepared baking sheet using an ice cream scoop or 1/4-cup measure. Bake biscuits until tops brown, about 15 minutes.
