Baked Lemon Doughnuts with Lemon Glaze

- 2 tablespoons granulated sugar
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
- 1/3 cup milk
- 1 teaspoon vanilla
- Glaze
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon lemon juice
- Yellow sugar crystals or candy sprinkles, if desired

Directions
1 Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
2 In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
3 Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
4 Meanwhile, in small bowl, mix powdered sugar, 1 tablespoon milk and 1 teaspoon lemon juice with whisk until smooth.
5 Dip tops of doughnut tops in glaze; sprinkle with sugar crystals. Serve warm.
Expert Tips
* Substitute orange peel and juice to make orange doughnuts.
* When grating citrus, be sure to remove only the peel and not the white layer between the peel and fruit (pith), which can be bitter.
