Ingredients

  • 6 cups water
  • 6 boneless skinless chicken thighs
  • 1 cup tomato juice
  • 1 teaspoon cumin
  • 1 teaspoon mexican oregano
  • 1/2 onion chopped
  • 1 teaspoon minced garlic
  • 2 tomatoes chopped
  • 2 tablespoons chopped jalepenos
  • 2 tablespoons chopped cilantro
  • 1/4 cup chopped green chilies
  • 1/4 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1/4 cup chicken base paste

Preparation

Step 1

Bring water to a boil.
Add the chicken and simmer until cooked through.
Remove the chicken and reserve the broth.
Cut the chicken into bite sized pieces and return to the broth.
Add the tomato juice, cumin, oregano, onion, garlic, chiles and red pepper flakes.
Bring to a boil and cook 10 minutes.
Whisk in base and cream.
