Holiday Fruitcake

Ingredients

  • 3 C whole red and green candied cherries
  • 3 C candied pineapple, diced
  • 1 pkg (1 lb) walnuts, chopped
  • 1 pkg (10oz) golden raisins
  • 1 C butter, softened
  • 1 C sugar
  • 1 C sugar
  • 5 eggs
  • 4 T vanilla
  • 3 C flour
  • 3 tsp baking powder
  • 1 tsp salt

Preparation

Step 1

1. In bowl, combine chrries, pineapple, walnuts and raisins. Set aside.

2. In mixing bowl, cream shortening and sugar. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to the creamed mixture and mix well.

3. Pour over fruit mixture and stir to coat.

4. Pour into greased and floured 10 inch tube pan. Bake at 300 for 2 hours or until toothpick comes out clean. Cool 10 minutes before removing from pan. Wrap tightly and store in cool place.
