Ingredients

  • 1 15oz can black beans
  • 1 15 oz can pinto beans
  • w 15oz can white beans (butter)
  • 1 red onion, chopped
  • 1 10oz pkg frozen corn
  • 1 jicama - diced
  • 1-2 stalks celery
  • 3/4 C olive oil
  • 3 TBL red wine vinegar
  • 3 TBL lime juice
  • 1 1/2 TBL lemon juice
  • 3/4 tsp crushed garlic
  • 3 TBL sugar
  • 1 TBL kosher salt
  • 1 tsp cumin
  • 1 tsp fresh ground pepper
  • 1 dash tabasco sauce
  • chili powder - 2 taste
  • 1 avocado, diced

Preparation

Step 1

drain & rinse beans
combine beans, onion, cilantro, corn, jicama, celery in lg bowl
in sm bowl, whisk together remaining ingredients , except chili powder & avocado
pour dressing over bean - mix well
add chili powder
cover & chill thoroughly
before serving, toss salad again - add more chili powder if necessary
spread avocado over individual salads

don't add avocado until right before serving
