Thai Quinoa Stir Fry

Ingredients

  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 cup quinoa
  • 2 chicken breasts, thawed and chopped
  • 8 oz frozen pineapple tidbits
  • 1/2 can of peas
  • 2 eggs, scrambled
  • 2 tablespoon soy sauce
  • 2 tablespoon lemon juice
  • Dash of garlic salt
  • Peanuts (optional)

Preparation

Step 1

Add quinoa, coconut milk, and chicken broth to a pot. Bring to a boil then cover on low until quinoa is cooked. In a separate pan, cook chicken. Once fully cooked, add peas and pineapple. In a third large pan or wok, scramble eggs. Then add quinoa, and chicken, peas, and pineapple. Add the soy sauce and lemon juice and dash of garlic salt. Mix together and serve. Can be garnished with crushed peanuts in desired.
