Weight Watchers Veggie Cups

Ingredients

  • 1 10 oz. package frozen chopped spinach
  • 1 cup liquid egg substitute
  • 1 cup shredded mozza cheese
  • 1/4 cup diced red pepper
  • 2 diced green onions
  • 3 to 4 drops tabasco sauce

Preparation

Step 1

Microwave spinach for 2 1/2 minutes on high. Squeeze out the excess liquid.

Line a 12 cup muffin pan with paper baking cups. Spray the cups with cooking spray.

Combine all ingredients in a bowl. Mix well. Divide evenly among muffin cups.

Bake at 350 for about 25 minutes or until egg is cooked.

These can be frozen and reheated in microwave.

Per 2 cups - 77 calories, 9 g. protein, 3 g. carbs, 3 g. fat

Note - the nutritional information is based on 12 muffin cups. I usually divide the recipe into about 10 cups so they are a little bigger.
