Broiled steak wiht rice salad

Ingredients

  • 1 c long grain rice
  • 2 boneless NY strip steaks, 1.75 lbs total
  • salt and pepper
  • 3 carrots, shredded
  • 1/2 c chopped parsley
  • 1/4 small red onion, diced
  • 1 tbsp rice vinegar
  • 1 tsp sugar

Preparation

Step 1

Cook rice.
Heat broiler. Place steaks on a baking sheet and season both sides with salt and pepper. Broil until medium rare, about 10 minutes, flipping once. Remove from oven and tent with foil, rest 5 minutes.
Transfer rice to a large bowl. Add carrots, parsley, onion, vinegar and sugar. Season with salt and pepper and toss to combine. Slice steak against the grain and serve with rice.
