Seven-Minute Frosting

Ingredients

  • 3/4 C granulated sugar
  • pinch of cream of tartar
  • pinch of salt
  • 3 T cold water
  • 1 egg white
  • 1/2 tsp vanilla

Preparation

Step 1

In top of double boiler, combine sugar, cream of tartar, salt, water and egg white. Cook over boiling water, beating constantly with an electric mixer until frosting forms stiff but moist peaks, about 4-7 minutes. Scrape sides and bottom of pan occasionally. Remove from heat and fold in vanilla.

CHOCOLATE 7 MINUTE FROSTING: Prepare frosting and gently fold in 1 square unsweetened chocolate, which has been melted and cooled.

PEPPERMINT: Prepare frosting but substitue 3 or 4 drops peppermint extract for vanilla.
